2 Tbspred onion, finely minced

2 cboiling water

1mango, firm

1 Tbsplime juice

1 clovegarlic

1/2 tspsalt

2 Tbspcilantro, fresh, minced

1 TbspCayenne pepper
How To Make mango salsa

1Place the minced onion in a small strainer in the sink and pour the boiling water over it. This will take some of the bite out of the onion and turn it a striking shade of purple-pink.

2Combine all ingredients and mix gently. Cover tightly and refrigerate for 2 hours or more to allow flavors to blend.
