This recipe has many names. Texas Caviar is one....but my friend's know it as Karen's special salsa. It is very different but OH so good! Put it out at your next gathering and it will be gone in a heartbeat.

Ingredients For karen's special salsa

3/4 capple cider vinegar
-
1 Tbspwater
-
1/4 colive oil
-
1 Tbspsalt
-
1/2 tsppepper
-
1 csugar
-
1 canpinto beans, rinsed and drained
-
2 canblack-eyed peas, rinsed and drained
-
1 canshoe peg corn
-
1 mdred onion, chopped
-
1 mdgreen pepper, chopped
-
1 mdred or yellow pepper, chopped
-
1 jarpimiento, chopped
How To Make karen's special salsa

1Boil the vinegar, water, olive oil, salt, pepper, and sugar on the stove and cool.

2Rinse and drain the pinto beans, black eyed peas, and corn. Add the onion, peppers and pimiento.

3Pour the sauce that was cooked on the stove over all the ingredients and marinate overnight in refrigerator. Enjoy!
