Put this together yesterday. It similar to a topping you might find on Spanish tapas, but with some different ingredients. I use it for appetizers, Hor d’ oeuvres, burgers, or to top a meatloaf. Experiment… Have fun. So, you ready… Let’s get into the kitchen.

Ingredients For jam essentials: spicy tomato topper

14 ozdiced tomatoes, 1 can, including juice

1 Tbspgranulated sugar

1 Tbsprice vinegar, or plain white vinegar

1 tsptomato paste

1 tspred pepper flakes, or to taste

1/4 tspground cinnamon

1/4 tspground ginger

1/4 tspground cumin

1 Tbsplemon juice, freshly squeezed

2You will need a small saucepan to make this recipe

3Gather your ingredients (mise en place).

4Add all of the ingredients, except the lemon juice to a small saucepan, over medium-low heat.

5Allow to slowly simmer until it begins to thicken.

6Depending your definition of “simmer” the process could take from 1 – 2 hours. Just make sure it is low-and-slow.

7Add the lemon juice and do a final tasting for proper seasoning.

9Idea #1: Soften some cream cheese, add a few spices (salt, pepper, cumin, etc.), mix in a bit of breadcrumbs for crunch, place on a tasting spoon, and top with some tomato topper. Idea #2: Same as Idea $1, except serve on toast points or crackers. Idea #3: Use it to top a meatloaf, or burger. Have fun with it. Enjoy.
