I love different salsas for more variety. This is my take on a corn salsa and I'm always asked to bring it to functions.

Ingredients For hearty corn salsa

  • 1 c
    corn kernels, fresh or frozen (i used trader joe's organic frozen that i defrosted under hot water)
  • 1
    poblano chili de-seeded and chopped fine
  • 1
    jalapenos, fresh de-seeded and chopped fine
  • 1/2
    red onion, small chopped fine
  • 1/3 can
    cilantro, fresh chopped fine
  • 1
    juice of 1 lime
  • 2
    tomatoes chopped into small pieces

How To Make hearty corn salsa

  • 1
    Mix all ingredients, chill and serve with organic corn tortilla chips.
