Fresh because it's not cooked. If you made it from fresh tomatoes use green chilies as well. I used Rotel tomatoes. This is a riff on a recipe I've been making for years.

Ingredients For gigi's fresh salsa

1 canrotel tomatoes, you octane of choice

1rib celery, i like the tender inner ribs

1/2``onion
-
1/2bell pepper
-
1/4 tspeach, ground jalapeno or cayenne, ground corriander,and celery salt

1 tspdried cilantro.. 1t ch fresh

1 tspground mustard seed, tarragon, sugar, garlic powder

salt to taste

juice of one lime or lemon

1/4 colive oil
How To Make gigi's fresh salsa

1Chop the vegetables fine Pour Rotel tomatoes into a medium sized bowl and add the vegetables. Add spices, oil and juice

2Adjust sale and let stand at room temp about an hour for flavors to meld.

3Serve with tacos, as a dip, or on meats. Keeps about 3 days.
