Ingredients For easy peasy mexican layered salad

  • 1 lg
    iceburg lettuce head, sliced
  • 28 oz
    black beans, canned, rinced & drained
  • 16 oz
    corn, canned *if frozen defrost & drain*
  • 2 lg
    tomatoes, chopped
  • 1 md
    red onion, chopped
  • 8 oz
    sharp cheddar cheese, shredded *more if you wish*
  • 1 lg
    bag of tortillas, crushed
  • DRESSING
  • 16 oz
    chipotle salsa
  • 16 oz
    avocado ranch dressing
  • 2 Tbsp
    cumin powder
  • 1 tsp
    garlic powder
  • juice & zest of one lime

How To Make easy peasy mexican layered salad

  • 1
    Combine dressing ingredients in a mixing bowl. Add sliced lettuce to a large serving dish or pan. Layer beans, corn, onion, tomatoes and dressing on top. Chill in fridge until ready to serve.

    Right before serving, add cheese and crushed tortilla chips on top. Enjoy
