This salsa is great for parties and perfect for summer cook outs! You can exchange the green bell pepper for a jalapeno if you like the heat.

Ingredients For creamy black bean salsa

  • 1 can
    black beans (15 oz)
  • 1 1/2 c
    frozen corn, thawed
  • 1 c
    chopped red bell pepper
  • 3/4 c
    chopped green bell pepper
  • 1/2 c
    chopped red onion
  • 1 Tbsp
    minced fresh parsley
  • 1/2 c
    sour cream
  • 1/4 c
    mayonnaise
  • 2 Tbsp
    red wine vinegar
  • 1 tsp
    cumin
  • 1 tsp
    chili powder
  • 1/2 tsp
    salt
  • 1/8 tsp
    black pepper

    In a large bowl, combine the beans, corn, peppers, onion, and parsley.
