After many attempts and looking at many recipes, this is the rub we use the most. This recipe makes enough for one rack of spareribs, about 3 pounds. Wrap the ribs or chicken in foil when baking or grilling, otherwise the brown sugar will burn.

1/4 cbrown sugar, firmly packed

1 Tbspsmoked paprika, medium hot

1 1/2 tspgranulated garlic

1 1/2 tsponion powder

1 1/2 tspchili powder, medium hot

1 tspcumin, ground

1/2 tspkosher salt

1/2 tspcayenne pepper, to taste
How To Make oink & cluck best dry rub

1Put all ingredients in a small bowl and whisk until well combined. Taste and adjust seasonings to your own personal preference.

2Use immediately, or place in an airtight container to store. This makes enough for one good sized rack of spare ribs.

3To use: rub all surfaces of the ribs or chicken and prepare as you wish.
