This recipe makes a simple, flavorful mushroom sauce that most people will enjoy. The flavor of the dish will depend upon the type of mushroom or mushrooms you choose. A bouquet garni is a bundle of aromatic herbs that help to flavor dishes. This classic version requires: a few fresh parsley stalks, thyme sprigs and bay leaves. Take some wax free kitchen string and tie the herbs together, creating the bouquet garni, (makes it easier to remove after cooking) then add the bundle to the pot.

Ingredients For yummm, mushroom sauce

  • 60 gr butter
  • 1- 2 cloves garlic
  • 1 small onion, yellow or sweet
  • 800 gr mushrooms, varied, roughly chopped
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1 1/4 cup chicken stock
  • 1 ounce dry white wine (or cider)
  • small bouquet garnia
  • 2 tbsp fresh parsley
  • 1/3 cup sour cream
  • flour or cornstarch for binding (if necessary)

How To Make yummm, mushroom sauce

    Melt butter in pan and saute chopped garlic until golden brown, then add the chopped onions and fry them until lightly golden.

    Add the mushrooms, if large chopped into pieces and add a little water.

    Next add the salt, pepper, bouquet garnia, chicken stock, wine or cider.

    Finally, add the chopped parsley, and the cream, mix well, bring to a boil (stirring constantly) then simmer until your desired consistency is obtained. If necessary bind with corn starch or flour to thicken. When ready to serve remove the bouquet garnia and enjoy.
