tzatziki sauce
I have a real soft spot for Greek Lamb Souvlaki and rice. I could eat it once a week! But it's just not the same without the Tzatziki sauce! (Trust me, I tried!) I found this recipe on the internet somewhere, adapted it just a tiny bit, and it works wonderfully. And it's SO easy. Hope you enjoy as much as we do!

Ingredients For tzatziki sauce

2 cGreek yogurt

1 lgcucumber

1/4 mdwhite onion

2 Tbsplemon juice

1 Tbspground dill weed

1 Tbspminced garlic

2 Tbspextra virgin olive oil

1/2 tspsalt

1/2 tspblack pepper
How To Make tzatziki sauce

1Drain excess water off the yogurt. (I do this with a fine sieve.)

2Meanwhile, peel and then cut the cucumber in half longways. Using a spoon, remove all the seeds.

3Grate the cucumber. (This is another sieve moment - good thing I have a few - but if you don't, place the grated cucumber in a coffee filter in a colander to drain.)

4Finely mince the onion. Allow extra juices to run off with the grated cucumber. (I usually allow this for about 1/2 hour.)

5Add all ingredients to a covered bowl and mix well. Refrigerate at least one hour. Though this is good after the one hour refrigeration, it is even better the next day.
