1Remove the core of the tomatoes and discard them.

2Using a sharp knife, make an "x" at the bottom.

3Emerge prepared tomatoes in boiling water and process for 40 seconds at the most.

4Remove tomatoes and plunge them in an ice water bath. Leave them in for 3 to 5 minutes.

5Using a paring knife, peel off their skins and discard them. At this point, they can be crushed if desired.

6Cut the tomatoes in half and remove the seeds; discard them. Chop or dice depending on the recipe.
