southern essentials: vinegar bbq sauce
This is not a typical South Carolina BBQ sauce. It is heavy on vinegar, but I added elements of more Northern sauces, like Kansas City. It is a thin sauce yet packed with lots of great flavors. Plus, it is easy/peasy to make. So, you ready… let’s get into the kitchen.

1 capple cider vinegar

6 oztomato sauce

1/4 ccoconut sugar

2 Tbspmustard, yellow variety

2 Tbspfresh clover honey

1 Tbsplime juice, freshly squeezed

2 tsphot sauce, i prefer franks

1/2 tspsalt, kosher variety, fine grind

1/4 tspwhite pepper, freshly ground

1/8 tspgarlic powder

1 - 2 pinchred pepper flakes

2What you will need? This can be made in a single pot, no lid required, and a vessel to store it in.

3What to serve with it? I like this sauce with beef, pork, and even chicken. I will sometimes add a dash or two to spice up a rice dish, and even add it to a soup or stew.

4How to store it? Because homemade spices and condiments do not contain any preservatives, it is important to store them properly. Non-reactive (glass) containers with tight-fitting lids are a must. If I am doing homemade sauces, I love using Weck jars. They are glass, come in all sizes and shapes, and have excellent leakproof lids. If you shop online, you can go to Amazon, type in “Weck Jars” and you will find a ton of them. They last forever, unless you break them, and they are very reasonable, price wise. Sauces, like this, in most cases, should be stored in the fridge. If properly stored, this sauce should last 2 – 3 weeks. FYI: This sauce can be frozen, and in which case it will last for several months. If you freeze things like this recipe, I suggest getting a plastic ice tray and measure out individual portions then freeze, pop out the frozen sauce, and put them into a freezer bag.

6Gather your ingredients (mise en place).

7Add all of the ingredients to a saucepan over medium heat.

8Whisk until combined.

9Allow to slowly simmer for about 10 minutes, stirring occasionally.

10Allow to cool, and then strain to remove the pepper flakes, and properly store until needed.
