This can be a dipping sauce, or something you might drizzle over tacos, burritos, enchiladas, or whatever you choose. It is an excellent sauce that brings a spicy level of flavor to many South-of-the-Border dishes. So, you ready… Let’s get into the kitchen.

Ingredients For south-of-the border essentials: mexican sauce

    dried guajillo peppers
  • 2 md
    dried pasilla peppers
  • 14 oz
    diced tomatoes, 1 can with juice
  • 1/2 md
    yellow onion, roughly chopped
  • 2 c
    beef stock not broth
  • 2 Tbsp
    apple cider vinegar
  • 2 Tbsp
    coconut sugar
  • 1 Tbsp
    ground achiote
  • 2 tsp
    salt kosher variety, fine grain
  • 1 tsp
    ground cumin
  • FINISHING TOUCH
  • 2 Tbsp
    lime juice, freshly squeezed

How To Make south-of-the border essentials: mexican sauce

    What will you need? You will need a good pot to reduce the sauce, and a blender to mix it all up.

    Gather your ingredients (mise en place).
  • 4
    Cut of the tops of the chilies and remove the seeds. Place into a bowl and cover with hot/boiling water for about 20 minutes.

    After the allotted time, place the rehydrated chilies and the remainder of the ingredients (except the lime juice) into a blender, and blend until smooth.

    Add the blended ingredients to a saucepan and slowly simmer until it begins to thicken, and reduces by 30%, about 20 – 25 minutes.
