2 mddried pasilla peppers

14 ozdiced tomatoes, 1 can with juice

1/2 mdyellow onion, roughly chopped

2 cbeef stock not broth

2 Tbspapple cider vinegar

2 Tbspcoconut sugar

1 Tbspground achiote

2 tspsalt kosher variety, fine grain

1 tspground cumin

2What will you need? You will need a good pot to reduce the sauce, and a blender to mix it all up.

3Gather your ingredients (mise en place).

4Cut of the tops of the chilies and remove the seeds. Place into a bowl and cover with hot/boiling water for about 20 minutes.

5After the allotted time, place the rehydrated chilies and the remainder of the ingredients (except the lime juice) into a blender, and blend until smooth.

6Add the blended ingredients to a saucepan and slowly simmer until it begins to thicken, and reduces by 30%, about 20 – 25 minutes.

8Add the lime juice to brighten the sauce and serve with your favorite Mexican dishes. Enjoy.
