son's red wine pasta sauce

This is one of my son's famous Pasta Sauces...He just loves to come up with different sauce recipes...He made a home run on this one...There is nothing left, it is all gone...He loves to use Wine's many different types of wine...He picked the Shiraz because it is slightly dry and full bodied..Fantastic Job!!!

Ingredients For son's red wine pasta sauce

2 Tbspcoconut oil

1 Tbspgarlic minced

1 lbitalian sausag (hot or mild)

1 cred onions (chopped)

1/2 Tbsporegano, fresh

1/4 tspitalian parsley

3/4 cshiraz wine (yellow tail)

1/2 cmushrooms, fresh (sliced)

3 cantomato paste, italian (6 oz total)

3 canwater (6 oz total)

1 pinchcayenne pepper
-
3sugar cubes
-
1 1/2 ccheese romano shredded
-
2 boxpenne pasta
-
1 Tbspolive oil, extra virgin

1 1/2 tsporegano, fresh

water, boiling
How To Make son's red wine pasta sauce

1In large skillet, brown Italian Sausage out of casing, push to one end of skillet brown onions and mushroom, garlic and other spices and herbs, add wine to meat and vegetables and spice, simmer for 10 minutes...

2Add in Paste and water and sugar add in cayenne pepper and stir, simmer for 20 minutes...

3Cook pasta in boiling water, add olive oil, oregano and cook for 15 to 20 minutes..

4Drain, place pasta on plate and sauce on top then top with Romano Cheese...Enjoy
