If you have ever been to a BBQ joint down South, you have probably been introduced to what is known as “Alabama White BBQ Sauce.” I’m sure that if there ever was an original recipe for this sauce it is now lost to history. My variation is kicked up with a fun spice combination, and some dill relish. My two favorite ways to serve this are with chicken and ribs; however, the introduction of the dill relish, will make it an excellent candidate for seafood. So, you ready… Let’s get into the kitchen.

2 clovebaked garlic

1/2 cmayonnaise, duke’s is my favorite, but it can be difficult to find

2 Tbspdill relish

1 Tbsplemon juice, freshly squeezed

1 Tbspapple cider vinegar

1 Tbspfresh clover honey

1/2 tspwhite pepper, freshly ground, or to taste

1/4 tspsalt, kosher variety, or to taste

1 tspdijon mustard, i prefer grey poupon

1 tsphot sauce, i prefer frank’s

1PREP/PREPARE

2Chef’s Note: While this sauce is defined as a Barbecue Sauce, most chefs consider it a condiment. In addition, I do not recommend using this sauce as a marinade.

3Gather your Ingredients (mise en place).

4Begin by baking the garlic.

6Place all the ingredients into a blender.

7Blend until completely smooth.

8Chef’s Tip: If you want the sauce thinner, add a bit of water, a teaspoon at a time, until you reach the desired consistency. If you want it thicker, add a a bit more mayonnaise until you like what you see.

9Chef’s Note: Do a final tasting for proper seasoning.

10Place in a non-reactive jar, and store in the refrigerator until needed.

11Chef’s Tip: This sauce benefits from a night in the frig before its first use.
