quick pickled onions

I LOVE pickled onions on top of what I consider to be NC BBQ. Pulled pork or chicken, topped with a scoop of coleslaw, and some pickled onions and I am a happy woman. I can order this in a local restaurant, and eat it out of the bun, but who needs to eat them out when you can make them so easily?

Ingredients For quick pickled onions

  • 1/2 c
    apple cider vinegar
  • 1 Tbsp
    sugar
  • 1 1/2 tsp
    kosher salt
  • 1
    red onion, thinly sliced

How To Make quick pickled onions

  • 1
    Whisk first 3 ingredients and 1 c water in small bowl until sugar and salt dissolve. Place onion in a jar, pour vinegar mixture over. Let sit at room temperature 1 hour (can be made 2 weeks ahead). Cover and chill. Drain onions before using.
