quick essentials: down & dirty pizza sauce

I have a favorite pizza sauce, but it takes a couple of hours to make. So, what do you use when you don’t have that kind of time… Andy’s Down & Dirty Pizza Sauce. Simple to put together, and in 30 minutes, you’ve got some tasty, tangy sauce to put on your pie. So, you ready… Let’s get into the kitchen.

Ingredients For quick essentials: down & dirty pizza sauce

  • PLAN/PURCHASE
  • 14 1/2 oz
    crushed tomatoes, 1 can, i prefer hunts
  • 1 clove
    garlic, minced
  • 3 Tbsp
    crisp white wine, or two tablespoons white wine vinegar
  • 1 tsp
    oregano, dried variety
  • 1/2 tsp
    basil, dried variety
  • salt, kosher variety, to taste
  • black pepper, freshly ground, to taste

    Chef’s Note: I don’t have a lot of images for this recipe, because I was making it on the fly for some unexpected guests. But, photos or not… this is a really good pizza sauce.

    Gather your Ingredients (mise en place).

    Place the tomatoes in a small saucepan, over medium-low heat.
  • 5
    Chef’s Note: There are a lot of canned tomatoes out on the market; however, for a nice tart (not sweet) tomato sauce, I prefer Hunts, Diced Tomatoes. They have just the right acidic levels to give you a tasty sauce.

    When you see wisps of steam coming off the tomatoes, add the garlic, wine or vinegar, oregano, and basil.

    Bring to a simmer, and then season with a bit of salt and pepper.

    After about 10 minutes, remove the sauce from the pan, place into a blender, and puree.

    Return to the saucepan, continue to simmer, and test the seasoning.

    Simmer for an additional 10 minutes.

    Spread the sauce over your crust, add your toppings, and go for it. Enjoy.
