poultry essentials: excellent wing dipping sauce
I posted a chicken wing recipe the other day, and as is my wont, I came up with a new dipping sauce. A lot of times the sauces are a bit pedantic (nothing to write home about), but in this case it turned out pretty good. At least if you can trust the tastebuds of my guests. Easy/Peasy to make and great as a dipping sauce for chicken wings, or other things to nosh on. So, you ready… Let’s get into the kitchen.

- THE SAUCE

1 cfiltered water

1/2 cfresh clover honey

1/4 ctamari sauce or liquid aminos

3 Tbsptoasted sesame oil

3 Tbspmirin

1 Tbspchopped ginger

1 Tbspdehydrated garlic

1/4 tspred pepper flakes, or to taste
- THE SLURRY

3 Tbspcornstarch or arrowroot powder

3 Tbspfiltered water

2You will need a saucepan to make this recipe.

3The Slurry A slurry is basically a liquid (water stock), mixed with an equal amount of a thickening agent (flour, arrowroot power, cornstarch). When added to a soup, stew, sauce, it thickens the liquid. The more you add, the thicker it gets.

4Gather your ingredients (mise en place).

5Add the sauce ingredients to a saucepan and bring up to a simmer.

6Make the slurry and mix until combined.

7Add to the simmering sauce.

8Simmer until the sauce thickens, about 3 – 5 minutes.

9PLATE/PRESENT

10Serve while nice and hot, and dip away. Enjoy.
