I served this with an Indian entree with tilapia, Israeli couscous, spiced okra and curry sauce. The vinegary kick was a nice accompaniment.

Ingredients For pickled carrots

  • 3
    carrots, grated
  • 1/2 c
    apple cider vinegar
  • 1/2 c
    water
  • 1/2 tsp
    kosher salt
  • 1 Tbsp
    dill, dried

How To Make pickled carrots

  • 1
    Add ingredients to a mason jar and shake to combine. Store in the fridge up to one week.
