An old recipe. I think this would be great topping a good meatloaf just before baking it.

Ingredients For pepper hash

  • 12
    bell peppers (6 green, 6 red), seeded, chopped fine
  • 6
    onions, chopped fine
  • 1 sm
    white cabbage, chopped fine
  • 1 qt
    vinegar
  • 1 c
    brown sugar
  • 2 Tbsp
    salt
  • 2 Tbsp
    mustard seeds

How To Make pepper hash

  • 1
    In a cheesecloth combine the peppers, onion and cabbage. Scald in boiling water. Squeeze dry and remove from cheesecloth.

    Heat vinegar, sugar, salt and mustard seeds. Add vegetables and bring to boiling point.

    When cool, put into sterilized canning jars and seal.
