Ingredients For pea-prosciutto sauce

  • 4 oz
    prosciutto, chopped
  • 2 Tbsp
    olive oil
  • 3 clove
    garlic, sliced
  • 1 Tbsp
    tomato paste
  • 1 c
    pasta-cooking water
  • 1/4 c
    heavy cream
  • 1 lb
    ravioli
  • 1 c
    frozen peas, blanched
  • parsley, chopped
  • parmesan cheese, grated, for topping

How To Make pea-prosciutto sauce

  • 1
    Cook the proscuitto in a skillet with the olive oil over medium heat until crisp, 4 minutes. Stir in 3 slices of garlic and tomato paste; cook 1 minute.

    Ladle in the pasta-cooking water and simmer until reduced to half, 4 minutes. Add the heavy cream and simmer until thickened, 3 minutes.

    Toss with the cooked ravioli, blanched peas, and some chopped parsley. Top with grated parmesan cheese. Enjoy!
