The strength of these sprigs surpasses sweet-smelling breath, eaten as a food rather than a garnish, parsly has earned a reputation as a natural healer, a good source of 'folate'. You need 'folate', a B vitamin for producing red bllod cells and help to prevent 'birth defects'.

Ingredients For parsley-garlic topping

  • 1 1/2 c
    tightly packed flat-leaf parsley leaves
  • 1 Tbsp
    grated lemon rind
  • 1
    clove garlic, minced
  • 1 Tbsp
    fresh lemon juice
  • PARSLEY-GARLIC TOPPING

How To Make parsley-garlic topping

  • 1
    In food processor, combine the parsley, lemon rind, and garlic. Process until the parsley is minced. Add the lemon juice and process briefly to mix. Serve immediately. Makes 3/4 cup.

    Sprinkle the topping on grilled fish or chicken,or toss with cooked pasta or potatoes. (1/2 cup of parsley contains 40 mgs of vitamin C)
