1 Tbspgrated lemon rind

1clove garlic, minced

1 Tbspfresh lemon juice

How To Make parsley-garlic topping

1In food processor, combine the parsley, lemon rind, and garlic. Process until the parsley is minced. Add the lemon juice and process briefly to mix. Serve immediately. Makes 3/4 cup.

2Sprinkle the topping on grilled fish or chicken,or toss with cooked pasta or potatoes. (1/2 cup of parsley contains 40 mgs of vitamin C)
