Ingredients For mexican essentials: green chili sauce

  • PLAN/PURCHASE
  • 1 Tbsp
    grapeseed oil
  • 1 Tbsp
    sweet butter, unsalted
  • 1 1/2 Tbsp
    flour, all-purpose variety
  • 1 c
    chicken stock, not broth
  • 1/4 tsp
    white pepper, freshly ground, or to taste
  • 1/4 tsp
    ground cumin
  • 1/8 tsp
    salt, kosher variety, or to taste
  • 1/4 c
    sour cream
  • 1 Tbsp
    lime juice, freshly squeezed
  • 2 oz
    diced green chilies, mild or hot, your choice, drained, 1/2 can
  • 1/4 c
    colby jack cheese, freshly grated

How To Make mexican essentials: green chili sauce

    My favorite canned chilies are the Hatch brand, and they come in 4 ounce cans.

    Gather your Ingredients (mise en place).

    Add the grapeseed oil, and butter to a average-sized saucepan, over medium heat.

    When the foaming subsides, add the flour, and whisk to combine with the oil and butter.

    Whisk for about two minutes, until it resembles a thick paste.

    Add a quarter of the stock, and whisk until incorporated, then add the remainder of the stock, and whisk until combined.

    Reduce the heat to medium-low, add the cumin, salt, and pepper, and simmer until it begins to thicken, about 2 – 3 minutes.

    Add the sour cream lime juice, and green chilies, then mix to combine.

    Finally, add the cheese, and melt into the sauce.
