Ingredients For mexican essentials: green chili sauce

1 Tbspgrapeseed oil

1 Tbspsweet butter, unsalted

1 1/2 Tbspflour, all-purpose variety

1 cchicken stock, not broth

1/4 tspwhite pepper, freshly ground, or to taste

1/4 tspground cumin
-
1/8 tspsalt, kosher variety, or to taste

1/4 csour cream
-
1 Tbsplime juice, freshly squeezed

2 ozdiced green chilies, mild or hot, your choice, drained, 1/2 can

1/4 ccolby jack cheese, freshly grated
How To Make mexican essentials: green chili sauce

1PREP/PREPARE

2My favorite canned chilies are the Hatch brand, and they come in 4 ounce cans.

3Gather your Ingredients (mise en place).

4Add the grapeseed oil, and butter to a average-sized saucepan, over medium heat.

5When the foaming subsides, add the flour, and whisk to combine with the oil and butter.

6Whisk for about two minutes, until it resembles a thick paste.

7Add a quarter of the stock, and whisk until incorporated, then add the remainder of the stock, and whisk until combined.

8Reduce the heat to medium-low, add the cumin, salt, and pepper, and simmer until it begins to thicken, about 2 – 3 minutes.

9Add the sour cream lime juice, and green chilies, then mix to combine.

10Finally, add the cheese, and melt into the sauce.

11Chef’s Note: Do a final tasting for proper seasoning.
