Ingredients For maple brine

1 ceach: maple syrup and soy sauce

2 cdark brown sugar

6whole bay leaves

8 clovegarlic cut in half

2 tspwhole peppercorns

3/4 csea salt

3 lgsprigs thyme or lemon thyme (2-3 tsp dried)
How To Make maple brine

1Place all ingredients in a large pot and bring to a boil, dissolving sugar and maple syrup. Remove from heat and allow brine to cool completely before using.

2To use put in a plastic or glass container that is large enough to hold liquid and meat. (Pail) Put in fridge 2-3 days turning often. Keep covered holding meat under the brine.
