When we were in Jamaica we ate locally and a friend of ours took us to his sister's little restaurant. She let me have this Jerk Rub recipe which she makes weekly.

Ingredients For jamaican jerk rub

1 1/2 tspallspice, ground

1 1/2 tspthyme, dried

1 tspcurry powder

1 1/2 tsppaprika, sweet mild

1 tspsugar

1/2 tspkosher salt

3/4 tspfreshly ground black pepper

1 1/2 tspcayenne pepper

1/4 tspfreshly grated nutmeg

1/4 tspcinnamon, ground

1/8 tspcloves, ground
How To Make jamaican jerk rub

1Mix together all spices thoroughly and store in an airtight container.

2To use, rub on chicken, pork, or shrimp 15-20 minutes before grilling.
