Ingredients For homemade spaghetti sauce for canning

10 lbripe tomatoes

1/2large onion, chopped

1/2bell pepper, chopped

1/4 colive oil, extra virgin

1 Tbspparsley

1 Tbsporegano
-
2 Tbspminced garlic

1 Tbspsalt

2 Tbspsugar

1/4 cred wine vinegar

12 oztomato paste
How To Make homemade spaghetti sauce for canning

1Blanch tomatoes in boiling water for 1 min. immediately submerge in ice water bath. Peel off skins of tomatoes. Remove seeds.

2Saute Onion and pepper in oil until tender and onions are translucent.

3Add tomatoes. Cook in large pot on stove until tomatoes are soft and mushy. Add tomato paste and mash to desired chunckiness.

4Add spices and boil to desired consistency.

5Freeze or can in pressure canner for later use. May be used immediately if desired.
