Hollandaise Sauce is good stuff! In my world, you can put it on just about anything, but it's especially delicious in Eggs Benedict, asparagus or SEAfood dishes. :-) I usually double the recipe! The trick is, to keep whisking throughout cooking.

Ingredients For hollandaise sauce

3egg yolks

2 Tbsplemon juice

1/2 cbutter

1/4 tspsalt
How To Make hollandaise sauce

1Add egg yolks and lemon juice to a double boiler. With wire whisk, beat until well mixed. Place top of double boiler over bottom containing hot (not boiling) water.

2Add a third of the butter to the egg yolk mixture and cook, beating constantly until butter is melted.

3Add another third of butter, beating constantly. Repeat with remaining third, and beat until mixture thickens and is heated through.

4Remove from heat and stir in salt.
