Hollandaise Sauce is good stuff! In my world, you can put it on just about anything, but it's especially delicious in Eggs Benedict, asparagus or SEAfood dishes. :-) I usually double the recipe! The trick is, to keep whisking throughout cooking.

Ingredients For hollandaise sauce

  • 3
    egg yolks
  • 2 Tbsp
    lemon juice
  • 1/2 c
    butter
  • 1/4 tsp
    salt

How To Make hollandaise sauce

  • 1
    Add egg yolks and lemon juice to a double boiler. With wire whisk, beat until well mixed. Place top of double boiler over bottom containing hot (not boiling) water.

    Add a third of the butter to the egg yolk mixture and cook, beating constantly until butter is melted.
  • 3
    Add another third of butter, beating constantly. Repeat with remaining third, and beat until mixture thickens and is heated through.
  • 4
    Remove from heat and stir in salt.
