I got this recipe from my Mom. Most of the time she baked a Coconut Cake this was the frosting that she put on it. She would make the frosting and ice the cake and then press shredded coconut all over. This frosting is light-as-a-cloud and is much like the meringue you put on a pie. Try it over chocolate, white, yellow or angel food cake. For an added garnish, sprinkle the top and sides of the frosted cake with coconut like my Mom did. Enjoy!

Ingredients For fluffy seven-minute frosting

  • 1 3/4 c
    sugar
  • 1/2 c
    water
  • 4
    egg whites, room temperature
  • 1/2 tsp
    cream of tartar
  • 1 tsp
    vanilla extract

How To Make fluffy seven-minute frosting

    In a saucepan, bring sugar and water to a boil. Boil for 3-4 minutes or until a candy thermometer reads 242 degrees (firm-ball stage).

    Meanwhile, beat egg whites and cream of tartar in a mixing bowl until foamy. Slowly pour in hot sugar mixture; continue to beat on high for 7 minutes or until stiff peaks form. Add vanilla. Continue beating until frosting reaches desired consistency, about 2 minutes.
