enchilada sauce

I wanted to use enchilada sauce in a Mexican-style casserole recipe calling for tomato sauce. This was intended to give extra spiciness and some thickness to the sauce. It worked out quite well, based on several different recipes. Most recipes called for a large amount of sauce, so I also cut this one down to the amount that I needed.

Ingredients For enchilada sauce

  • 2 Tbsp
    olive oil
  • 2 Tbsp
    flour
  • 8 oz
    can tomato sauce
  • 1 1/2 Tbsp
    chili powder - heat level up to you
  • 1/2 tsp
    garlic powder
  • 1/2 tsp
    onion powder
  • 1/2 tsp
    cumin
  • 1/3 c
    water
  • salt & pepper, to taste

How To Make enchilada sauce

  • 1
    Add olive oil to a medium sauce pan and heat until a little flour sizzles. Then slowly add the rest of the flour while whisking into oil.

    Stir in tomato sauce, spices, and water.

    Heat to boiling, lower heat and stir until thickened. If too thick, add a little more water.

    Taste for salt and pepper.
