dressing essentials: warm apricot/mustard dressing

Easy/Peasy but oh so tasty… After making several batches of this dressing, I finally got it right by adding some apricot perseveres, and they perfectly balanced the sweet with the tart. This dressing would be at home drizzled over grilled chicken, or a slab of ribs; however, my favorite way to use this is warm and drizzled over a plate of greens, chopped veggies, and sliced tomatoes. FYI: This dressing tastes better the next day. So, you ready… Let’s get into the kitchen.

Ingredients For dressing essentials: warm apricot/mustard dressing

  • PLAN/PURCHASE
  • 1/4 c
    olive oil, extra virgin variety
  • 2 clove
    baked garlic, smashed
  • 2 Tbsp
    rice wine vinegar
  • 2 tsp
    whole grain dijon mustard
  • 1 1/2 Tbsp
    apricot preserves
  • 1/2 tsp
    salt, kosher variety, or to taste
  • 1/2 tsp
    white pepper, freshly ground, or to taste
  • 1/4 tsp
    crushed red pepper flakes

    Here is the mustard that I used for this dressing… it was awesome.

    Make sure that you use baked garlic… raw garlic is too strong, and will overpower the dressing.

    Since this, as most dressings, uses extra-virgin olive oil, choose the best that you can find.

    If you want it sweeter, then add a bit more apricot preserves. If you want it a bit hotter, add more red-pepper flakes. A bit more tangy... add more vinegar. Have fun with it. That is what cooking is all about.

    Gather your Ingredients (mise en place).

    Place all the ingredients into the bowl of a mini-prep, fitted with a s-blade.

    Chef’s Note: You could also do this manually, using a whisk.

    Use 1-second pulses, until all the ingredients are combined.

    Store in a sealed, non-reactive container, in a cool, dry place until ready to use.

    When ready, place the dressing in a small saucepan and heat up until warm (not hot).
