1 tspgrapeseed oil

1 Tbspyellow onion, chopped

2 ozsharp cheddar cheese, freshly shredded

2 ozpepper jack cheese, freshly shredded

2 ozcolby cheese, freshly shredded

1 tsparrowroot powder

3 - 4 ozevaporated milk

1 tspground cumin

2Gather your ingredients (mise en place).

3Add the grapeseed oil to a saucepan over medium heat.

4Add the onions, and then cook until they begin to soften, about 4 - 6 minutes.

5Mix the cheeses together with the arrowroot powder.

6Add to the saucepan and reduce heat to medium low.

7Add the evaporated milk.

8Whisk until the cheese melts and smoothly combines with the evaporated milk.

9Add the cumin, chili powder, and paprika, and continue to mix until all the ingredients are combined.

10Chef’s Tip: If the sauce becomes too thick, you can thin it down with a bit more evaporated milk.
