daddy's chipotle baste

My Dad made this on thick cut pork chops in the summer of 2000 at Chez Nous, but since Barb didn't know where she got the sauce, I had to make one of my own based on the ingredients.

Ingredients For daddy's chipotle baste

  • 1/2 jar
    pace salsa with chipotle
  • 2
    handfuls pinapple chunks in juice
  • 1
    peach
  • juice from pineapple

How To Make daddy's chipotle baste

  • 1
    Chop the peach and pineapple bits in a processor or blender (or on the counter with a knife). Add salsa until there are very few chunks left and only enough juice to get the right texture and flavor.

    Use on pork chops or chicken by sprinkling one side with Santa Fe seasoning and adding this to the opposite side once the meat is cooked.
