Ingredients For country style barbecue sauce

1onion, chopped

1 mdgreen bell pepper, chopped

1 stalkcelery with leaves, chopped

3 clovegarlic, chopped

1 Tbspfresh sage, chopped

1 cbutter, melted

3 ctomato juice

2 1/4 cketchup

1 1/2 cvinegar

3/4 cbrown sugar, firmly packed

6 oztomato paste (1 can)

1/2 tspsalt

1 cbourbon
-
rind of 3 lemons

juice of 3 lemons
How To Make country style barbecue sauce

1Saute the onion, green pepper, celery, garlic, and sage in the butter in a Dutch oven until the vegetables are tender.

2Add tomato juice and the next 5 ingredients; stir well. Bring to a boil; reduce heat, and simmer, uncovered, for 2 hours.

3Stir in the bourbon, lemon rind, and juice. Cover and simmer for 30 minutes.

4Use as a basting sauce for chicken or pork during cooking.
