condiment essentials: tableside pork bbq sauce

This is a great BBQ for use at the table… FYI, I usually put it into a squeeze bottle, and let my guests choose as much as they want. It is easy/peasy to put together, and combines a perfect balance between sweet, sour, and heat. I use it primarily on pork; however, it does a real good job on chicken. So, you ready… Let’s get into the kitchen.

Ingredients For condiment essentials: tableside pork bbq sauce

  • PLAN/PURCHASE
  • 3/4 c
    ketchup, homemade if possible
  • 1/4 c
    apple-cider vinegar
  • 1/4 c
    water
  • 2 clove
    baked garlic (not raw), smashed to a pulp
  • 1 Tbsp
    sweet butter, unsalted
  • 1 Tbsp
    coconut sugar
  • 1/2 tsp
    paprika, sweet or hot, your choice
  • 1/4 tsp
    frank’s hot sauce
  • 1 pinch
    cayenne pepper, or to taste
  • OPTIONAL ITEMS
  • if you want it hotter, add more cayenne
  • i like to add a bit of cumin, but that might not be everyone’s cup of tea
  • if you want it a bit sweeter, add some honey

    Gather your Ingredients (mise en place).

    Add all of the ingredients to a saucepan, over medium heat.

    Whisk the ingredients together, and bring up to a light simmer.

    Continue to lightly simmer the ingredients for 8 – 10 minutes.

    Allow to cool, and then add to container suitable for the table… like a squeeze bottle.

    Chef's Note: If the sauce is too thick, thin it down with some water, a tablespoon at a time, until you reach the desired consistency.

    Serve with just about any kind of pork, or even a nicely smoked chicken. Enjoy.
