Ingredients For classic mushroom sauce

3 Tbspbutter

3 cbutton mushrooms, washed and sliced (about 8 oz)

freshly ground black pepper, to taste (I always use mixed peppercorns)

3 large clovegarlic, pressed

1 tspdried thyme leaves

2 1/2 cbasic brown sauce
-
2 Tbspsherry
-
1/2 TbspWorcestershire sauce
-
1/2 tspblack truffle oil (the real stuff)
How To Make classic mushroom sauce

1Heat butter in a medium skillet over medium heat.

2When it starts sizzling, add mushrooms and season with freshly ground black pepper. Toss to coat and sauté until softened, about 5 minutes.

3Add pressed garlic and sauté for 1 minute.

4Add thyme and basic brown sauce. Stir well, bring to a boil before reducing the heat to medium-low; simmer gently for 15 minutes.

5Add sherry, Worcestershire sauce and truffle oil. Stir well and cook for another 5 minutes; taste and adjust seasoning before serving.
