Found this in an old deleted Reddit post and it sounded like it would be terrific on an omelette.

Ingredients For caramelized onion sauce

  • 1 Tbsp
    butter
  • 1/2 Tbsp
    olive oil
  • 1 md
    yellow onion, sliced thin
  • 1/2 tsp
    sugar
  • 1/2 Tbsp
    flour
  • 1/2 - 3/4 c
    milk or stock
  • 1/4 tsp
    Italian seasoning (or use favorite dried herbs)
  • 1/8 tsp
    pepper flakes or cayenne
  • 1 Tbsp
    shredded cheese, optional

How To Make caramelized onion sauce

  • 1
    In a large frying pan, melt the butter with the oil over medium-high heat; add the sliced onions then sprinkle the sugar over the onions; cook, stirring occasionally, for about 20-25 minutes until the onions start to darken and become tender.

    Lower the heat; sprinkle the onions with flour and stir into the onions. Gradually add the milk or broth (I use water with bouillon) and stir into the onion mixture. Continue stirring until the mixture thickens.

    Stir in the herbs and seasonings. Sprinkle with cheese (if using) and stir until it melts.
