Ingredients For bread & butter pickles

8 mdcucumbers, washed and thinly sliced

2 Tbspsea salt, or as needed

2 lgwhite onions, peeled, thinly sliced and then halved (lyonnaise cut)

2 cwhite sugar

2 cwhite vinegar
-
2 tspmustard seeds
-
2 tspcelery seeds
-
1 tspdry mustard
-
1/2 tspground turmeric
How To Make bread & butter pickles

1Wash cucumbers thoroughly before slicing them using a mandolin. In a large bowl, place sliced cucumbers and cover with salt; set aside for 3 hours. Transfer cucumbers into a colander and drain well. Using a mandolin, slice onions and add to a large bowl with cucumbers; stir to combine.

2In a large saucepan over medium heat, combine white vinegar, sugar, mustard seeds, celery seeds, dry mustard and turmeric. Stir mixture until sugar dissolves. Add cucumber mixture and bring to a boil; remove from heat.

3Using a slotted spoon, transfer pickles in sterilized jar and pour vinegar mixture to the top. Seal and transfer jar in a water bath for 5 minutes. Remove and let pickled cucumbers rest for a week. Makes 8 jars of 500ml
