I owe this one to my good friend Thea Pappalardo. She gave me this recipe last year, and it is my go to for my brisket and steaks. I have the recipe with a magnet on my fridge and keep some made up all the time for when we smoke or grill.

Ingredients For thea's rub

  • 1/2 c
    dark brown sugar
  • 1 Tbsp
    ground black pepper
  • 2 Tbsp
    kosher salt
  • 1 tsp
    cumin
  • 1 tsp
    cayenne powder
  • 2 tsp
    chili powder
  • 2 Tbsp
    paprika
  • 2 tsp
    ground dry mustard,
  • 2 tsp
    granulated garlic powder

How To Make thea's rub

    Combine all in a bowl.

    I keep mine unrefrigerated in an air tight container in my cupboard.

    To use, just scatter all over the surface of the meat you are smoking or grilling, rub into the meat, and grill or smoke as desired
