Ingredients For cinnamon-orange marinade (tabaka)

    oranges
  • 1 md
    lemon
  • 2 md
    limes
  • 2 clove
    garlic, peeled and minced
  • 1
    piece fresh ginger (1-inch) peeled and minced
  • 1 md
    yellow onion, peeled and finely chopped
  • 1 tsp
    ground cinnamon
  • 3 Tbsp
    sweet paprika
  • 1 Tbsp
    sugar
  • salt and pepper, to taste
  • 1/4 tsp
    grated nutmeg
  • 1/4 c
    dry white wine
  • 3 Tbsp
    vegetable oil

How To Make cinnamon-orange marinade (tabaka)

    Grate zest of 1 orange and the lemon. Juice the 3 oranges, lemon and limes. Combine juice and zest in bowl.

    Add garlic, ginger and onion to citrus juices along with cinnamon, paprika, sugar, salt, black pepper, nutmeg, wine and oil. Whisk to mix.

    Makes enough marinade for 1 1/2 pounds chicken or a game hen.
