2 mdlimes

2 clovegarlic, peeled and minced

1piece fresh ginger (1-inch) peeled and minced

1 mdyellow onion, peeled and finely chopped

1 tspground cinnamon

3 Tbspsweet paprika

1 Tbspsugar

salt and pepper, to taste

1/4 tspgrated nutmeg

1/4 cdry white wine

3 Tbspvegetable oil
How To Make cinnamon-orange marinade (tabaka)

1Grate zest of 1 orange and the lemon. Juice the 3 oranges, lemon and limes. Combine juice and zest in bowl.

2Add garlic, ginger and onion to citrus juices along with cinnamon, paprika, sugar, salt, black pepper, nutmeg, wine and oil. Whisk to mix.

3Makes enough marinade for 1 1/2 pounds chicken or a game hen.
