brine for roasted chicken

My kiddies love chicken and I needed a way to cook a whole chicken and not have it dry out. The brine flavors but does not over power.
Ingredients For brine for roasted chicken

3lemons, halved

1 Tbspdried thyme

1 Tbspdried oregano
-
1 Tbspdried basil
-
5jalapeno peppers, seeded

1/4 cblack peppercorns, whole
-
3bay leaves
-
1/3 cgarlic cloves, crushed

3/4 cbrown sugar
-
1 ckosher salt
-
1 galcold water
How To Make brine for roasted chicken

1Place all ingredients together in container big enough to hold whole chicken and mix well.(I use a 2gallon zipper bag and a bowl big enough to hold it.)

2Rinse whole roasting chicken, be sure to remove giblets and any loose parts from cavity. Submerge in brine for 18 to 24 hours, refrigerated.

3Roast according to usual method.
