brine for roasted chicken

My kiddies love chicken and I needed a way to cook a whole chicken and not have it dry out. The brine flavors but does not over power.

Ingredients For brine for roasted chicken

  • 3
    lemons, halved
  • 1 Tbsp
    dried thyme
  • 1 Tbsp
    dried oregano
  • 1 Tbsp
    dried basil
  • 5
    jalapeno peppers, seeded
  • 1/4 c
    black peppercorns, whole
  • 3
    bay leaves
  • 1/3 c
    garlic cloves, crushed
  • 3/4 c
    brown sugar
  • 1 c
    kosher salt
  • 1 gal
    cold water

How To Make brine for roasted chicken

  • 1
    Place all ingredients together in container big enough to hold whole chicken and mix well.(I use a 2gallon zipper bag and a bowl big enough to hold it.)

    Rinse whole roasting chicken, be sure to remove giblets and any loose parts from cavity. Submerge in brine for 18 to 24 hours, refrigerated.

    Roast according to usual method.
