argentine steak sauce - chimichurri
Chimichurri is a traditional accompaniment to steak and other BBQed meats in Argentina. It is also good on sausages, fish, chicken and even on a bowl of chili! It can also be used as a marinade for meats. Most recipes I've found are for large batches. This one is small enough to use up in a few days.

Ingredients For argentine steak sauce - chimichurri

1/2 mdonion, finely chopped

2-3 clovegarlic, minced

1/4 tspred pepper flakes

1/2 cfresh parsley, finely chopped

1/2 tspdried oregano (more if using fresh)

1/2 tsppaprika

1/2 tspsalt
-
1/4 tspground black pepper

1/2 Tbsplemon juice

2 1/2 Tbspred wine vinegar

1/3 colive oil
How To Make argentine steak sauce - chimichurri

1Mix onion, garlic, red pepper flakes, parsley, oregano, paprika, salt and pepper in a bowl of a food processor.

2Add lemon juice and vinegar, then pour in the olive oil slowly while pulsing.

3Use within a few days, or freeze in an ice cube tray. When frozen, pop cubes into a ziplock bag and use as needed.
