argentine steak sauce - chimichurri

Chimichurri is a traditional accompaniment to steak and other BBQed meats in Argentina. It is also good on sausages, fish, chicken and even on a bowl of chili! It can also be used as a marinade for meats. Most recipes I've found are for large batches. This one is small enough to use up in a few days.

Ingredients For argentine steak sauce - chimichurri

  • 1/2 md
    onion, finely chopped
  • 2-3 clove
    garlic, minced
  • 1/4 tsp
    red pepper flakes
  • 1/2 c
    fresh parsley, finely chopped
  • 1/2 tsp
    dried oregano (more if using fresh)
  • 1/2 tsp
    paprika
  • 1/2 tsp
    salt
  • 1/4 tsp
    ground black pepper
  • 1/2 Tbsp
    lemon juice
  • 2 1/2 Tbsp
    red wine vinegar
  • 1/3 c
    olive oil

How To Make argentine steak sauce - chimichurri

    Mix onion, garlic, red pepper flakes, parsley, oregano, paprika, salt and pepper in a bowl of a food processor.

    Add lemon juice and vinegar, then pour in the olive oil slowly while pulsing.

    Use within a few days, or freeze in an ice cube tray. When frozen, pop cubes into a ziplock bag and use as needed.
