This lovely jam is sweet with a light tomato flavor. It's really wonderful, opened it will last for 1 month in the fridge, unopened it will last a year.

Ingredients For tomato jam

2 lbfresh ripe tomatoes, seeded,

2 cwhite sugar

3/4 cwater

1/2lemon, juiced
How To Make tomato jam

1Pick nice ripe tomatoes, remove the skin and seeds. Coarsely cut up.

2In a large pot add tomato and the sugar and cook over medium heat until the sugar has dissolved.

3Raise the heat until the mixture starts to boil; allow to boil for 15 minutes, or until it thickens.

4Stir occasionally and remove any accumulated scum from the surface.

5Now, stir in the lemon juice and cook for 10 minutes ( or until thick)

6Cool slightly, then pour into sterilized jars, leaving a 1/4 inch space at the top.
