This is a unique way to use up all those tomatoes and it tastes GOOD TOO!!! It is also my entry into the ninja chefs challenge

Ingredients For tomato - cognac jam

5 lbripe tomatoes, finely chopped

3 3/4 csugar

8 Tbsplime juice

2 tspfresh ground ginger

1 tspcinnamon

1/2 tspground cloves
-
1 Tbspsalt
-
1 Tbspred pepper flakes

1/2 ccognac
-
2-3 sprigfresh mint (whole, to be removed before jarring)
How To Make tomato - cognac jam

1combine all ingredients in a large non-reactive pot and bring to a boil, reduce heat and simmer stirring regularly and simmer until it reduces to a sticky jammy mess. This will take about 1 - 1 1/2 Hours.

2Remove from heat and place in sterile jars leaving 1/4 inch headroom for expansion. Process in boiling water for 20 minutes.

3You did not miss a step, DO NOT PEEL AND SEED tomatoes.
