My family loves this recipe. We put this on our favorite ice cream. It's also good on a bagel. We eat this for breakfast. I added 1 pack of certo sure jell into the strawberry mixture as it was cooking and i didn't let the mix stand uncovered for 12 hours i just put them right into the hot jars. lettin the mixture stand helps the berries to plump. oh by the way the certo sure jell helps make the preserve gel a little.

Ingredients For strawberry preserves

1 1/2 quarts red, ripe strawberries

5 cups sugar

1/3 cup lemon juice
How To Make strawberry preserves

1Wash and hull strawberries. C ombine berries with sugar in a large stainless steel pan; let stand for 3 to 4 hours.

2Bring strawberries to a boil slowly, stirring occasionally. Add lemon juice. Cook rapidly until strawberry mixture is clear and syrup is thick, about 15 minutes.

3pour mixture into shallow pan and let stand , uncovered, for 12 to 24 hours. Ladle strawberry mixture into hot, sterilized jars, leaving 1/4-inch headspace. Process for 20 minutes in a boiling water bath. Makes four 8-ounce jars.
