A personal favorite of my family that goes back several generations. Can also use 7 1/2 cup(s) of Splenda for low-fat jelly.

Ingredients For plum jelly

  • 2 lb
    plums
  • 5 1/2 c
    plum juice
  • 7 1/2 c
    sugar
  • 6 Tbsp
    fruit pectin, powdered

How To Make plum jelly

    Place 2 lbs plums in enough water to cover them and boil for 30 minutes to get juice. Strain using a sieve or a strainer. Let cool before straining juice. Bring 5 1/2 cups plum juice to a rolling boil; add 6 TBSP Fruit Pectin and bring to another rolling boil; add sugar. Boil til juice runs clear and spins a thread. Let set approximately 15 to 20 minutes then skim off the top. Pour into 9 to 10 clean half pint jars and seal.
