Ingredients For fig preserves

2 lbwashed, cut or whole, figs

1 lbsugar

juice of 1 lemon

rind of 1 lemon
How To Make fig preserves

1combine ingredients & let mixture boil as hard as it will.

2After preserves begin to thicken, test by placing a small amount in the freezer. If syrup jells quickly, preserves are done.

3Put preserves in hot sterilized jars & seal. Will make about 3 pints.
