Never was a fan of cranberries until a couple of years ago. But now I seem to like them especially around the holidays. I made this one Thanksgiving for my mother who is a fan of cranberries. My sister and I take turns each year alternating Thanksgiving and Christmas. Now whichever holiday I get to cook that year my mom reminds me to make this for our holiday meal.

Ingredients For cranberry salad

  • 2 sm
    boxes of cranberry jello (3.4 oz.) - i have used strawberry
  • 2 c
    boiling water
  • 1 can
    crushed pineapple (20 oz.) do not drain
  • 1 can
    whole berry cranberries (14 oz.)
  • 1/2 c
    chopped celery
  • 1/2 c
    chopped walnuts or pecans
  • 1
    chopped apple leave skin on

How To Make cranberry salad

  • 1
    Mix the jello with hot water until dissolved.
  • 2
    Add all other ingredients together, mix well and allow to set. Approx. 6 hours.

    You can pour into a decorative mold pan or bundt pan for presentation. Garnish with greens, fresh cranberries or sprigs of mint.
