I got this recipe from a co-worker. She said this is her Dad's favorite thing in the world. I made if for a Christmas eve treat. My husband really liked it. It did have all of his favorites....Bacon, Onions, Tabasco and Coffee. We ate with crackers and sliced bread

How To Make bacon jam
-
1In a non stick pan, fry bacon in batches until browned and beginning to crisp. Use scissors to cut in 1 inch pieces.
-
2Fry onion and garlic in bacon fat on medium heat until translucent.
-
3Transfer the bacon, onion and garlic into a heavy based cast iron pot and add the rest of the ingredients except for the water. Simmer for 2 hours adding 1/4 cup water every 25-30 minutes and stir.
-
4Cool for about 15 minutes and then place in food processor. Pulse for 2 - 3 seconds so that you leave texture to the jam or you could keep processing and make it a smoother and more past like.
