I came across this recipe online. I made it as written but there was something, in my opinion, was missing. So, I tweaked it in a few places and it was much better. I first tried this on crackers and it was good. But, when I mixed it with ground beef it was amazing!

Ingredients For bacon jam

1 lbbacon, thick cut, coursely chopped

1 smonion, coursely chopped

5 clovegarlic, chopped

1/2 cbrown sugar, packed

1/2 ccoffee, brewed

1/4 cmaple syrup

1 Tbspapple cider vinegar
-
1 Tbspmustard, grainy

1/2 tspchili powder
-
1/4 tspcayenne pepper
How To Make bacon jam

1Fry the bacon in a heavy bottomed skillet (with a lid) until almost crispy. Transfer cooked bacon to a bowl and set aside.

2Drain all but 2 tablespoons of the bacon fat. Add onion and garlic and sauté for about 5 minutes, until onion has a soft texture..

3Return the bacon to the pan and add all other ingredients.

4Bring contents of skillet to a boil and then lower heat to medium low. Cook for 30 minutes and check consistency. The consistency should be that of jam.
