Something I had to learn to make, being married to a Southerner. My MIL shared this recipe with me & have to admit I actually like it. I'll never forget the first time my MIL made it...I was like, exactly what do you do with this?...LOL We very rarely can find country ham here, so I order it or his mother send us some when we run out. Either way, I always have some in my freezer. Serve with ham, grits, eggs and homemade biscuits to sop up any remaining juices. Enjoy!

Ingredients For ~ redeye gravy & country ham ~

    strong black coffee
  • 1/8 c
    brown sugar, packed

    country ham steak

How To Make ~ redeye gravy & country ham ~

    Mix the coffee and brown sugar until sugar is dissolved. Set aside.

    Fry your country ham in a cast iron skillet, on both sides until well browned. I add just a small amount of oil to the skillet. Save any drippings. Remove ham to a paper towel lined plate to drain and keep warm.

    Now, while the skillet is still warm, add the coffee mixture and scrape any bit of meat off the bottom of pan. Bring to a boil, stirring occasionally. Continue cooking until gravy is reduced by half. Serve over ham. Hubby likes some on his grits too. Make sure you have some good biscuits to sop up the remaining gravy!
